  1. Purple sweet potato

I bought the purple sweet potatoes from Sprouts Farmer Market. I have not seen purple sweet potatoes in any grocery stores in the Atlanta/Covington area.

  1. Coriander

used ground cilantro that I bought at Kroger. This is one of those spices that can be found in almost every grocery store in my area.

  1. Turmeric

I used turmeric powder in this recipe. You can easily spread turmeric powder on the potatoes. Again, you can find turmeric in most grocery stores. You can use fresh turmeric, but you have to chop it well.

  1. Smoked paprika

While I used smoked paprika, you can also use paprika in this dish.

  1. Pepper flakes

This is completely optional. To counterbalance the sweetness, I enjoy a little fire. But you can also do it without chili flakes.

  1. Grape seed oil

I used this one because I had it on hand.

Do you have to peel sweet potatoes for this dish?

I decided to peel the purple sweet potato because it looked a little lopsided. But when you make this dish, you don’t need to peel the purple sweet potatoes.

  • I decided to cut this purple sweet potato into bite-sized pieces. This speeds up the roasting process and results in sweet potatoes that are soft and slightly crispy on the outside.
  • If you want to keep this dish’s ingredients to a minimum, you can leave the chopped sweet potato in a bowl. Instead, put them on a baking sheet and top with herbs and oil. Then mix with the herbs and oil so that everything is evenly distributed.
  • When baking these sweet potatoes, be careful not to overlap them. This allows the steam to escape and creates a slightly crispy outer layer on the roasted sweet potato.
  • This is a versatile dish. Although I used a specific combination of herbs, this is not necessary. If you want to use the same spices, you can add a little cumin. If you decide to change things up, you can use a combination of fresh chopped herbs like coriander, parsley, and basil with oil. Or just a few tablespoons of harissa and oil. Or roast these sweet potatoes without herbs and spices and serve them garnished with chili flakes and honey.

What do you serve this roasted sweet potato with?

This dish can be served with some cherry chicken and some sautéed leeks and potatoes for a quick and nutritious lunch or dinner.

Ingredients

  • I used a few purple sweet potatoes, such as Stokes purple sweet potatoes.
  • 3 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp smoked paprika powder
  • 1 tsp pepper flakes
  • 3 tablespoons grape seed oil
  • Salt and pepper to taste
  • OPTIONAL: chopped fresh parsley for garnish.

Instructions

  1. Preheat oven to 425 degrees
  2. Wash and peel the purple sweet potato.
  3. Then cut into bite-sized pieces.
  4. Add oil, coriander, turmeric, smoked paprika, and chili flakes to a bowl and mix well.
  5. Then add the chopped purple sweet potato to this bowl and stir well.
  6. Place the seasoned purple sweet potato on a Silpat-lined baking sheet (or foil-lined baking sheet).

  1. Bake at 218 degrees Celsius for 20 minutes.
  2. Remove from the oven and season with salt and pepper.
  3. Serve hot, garnished with finely chopped fresh parsley.
