Easy Boursin pasta recipe with vegetables
This Baked Boursin Pasta starts with cheese and tomatoes, fried until the tomatoes burst, then stirred into a sauce. But in this recipe, I added some extra ingredients like mushrooms and spinach and instead of feta, I chose Boursin cheese with garlic and herbs which is amazing. The result is an incredibly creamy, ultra-flavorful pasta dish that only takes 35 minutes total and just 5 minutes of prep time!

Necessary ingredients

- Pasta – I used rotini, but any short pasta will work.
- Cherry Tomatoes – Cherry tomatoes are the perfect size for this recipe and are great roasted in the oven, and the burst tomatoes help make a sauce.
- Mushrooms – I used cremini, but mushrooms will work too.
- Garlic – For aroma and taste.
- Olive oil – Gives the skin fullness and the moisture it needs.
- Seasoning: The dish is seasoned with salt, pepper, and red pepper flakes.
- Boursin cheese – For the best taste, you need a full round block of Boursin cheese with garlic and herbs.
- Spinach: For this dish, fresh spinach works best.
- Parmesan – You want grated and shaved parmesan, both taste best straight from the block.
Prepare Boursin pasta with vegetables
This Baked Pasta with Boursin Cheese is a delicious weeknight dinner because it’s ready in just 35 minutes and requires just 5 minutes of hands-on prep. (Scroll down to see our easy printable recipe with full instructions and don’t miss the video below.)
Season vegetables: Place tomatoes, mushrooms, and garlic in a greased 9×13 baking dish. Mix with olive oil and herbs.
- Add the cheese: Place the cheese in a round shape in the center of the pan, surrounded by tomatoes and mushrooms.
- Bake: Bake at 200°C for 30 minutes until the tomatoes burst and the mushrooms are roasted.
- Cook the pasta: Meanwhile, cook the pasta until al dente. Book a cup of pasta water.
- Mix the ingredients: As soon as the tomatoes are ready, immediately stir in the spinach leaves and chop the cheese into a sauce. Stir in the pasta, adding any pasta water to thin the sauce, and stir in the grated Parmesan cheese.
- Enjoy it. Serve immediately with shaved parmesan cheese.
Tips & Variations
Baked pasta is super easy to make, but here are some suggestions to make it perfect every time.
- Reserve pasta water: Depending on how thick you want the sauce to be, you can thin it out a little after you’ve added the pasta. This works best with a splash of pasta water, as the starch in the pasta creates a smooth, creamy texture.
- Add the spinach to the hot sauce: You need the heat from the roasted ingredients to wilt the spinach. So stir it up right away.
- Modify the mixture: Although I enjoy the tomatoes, mushrooms, and spinach in my Boursin pasta, you are welcome to omit the mushrooms or spinach.
Serving Suggestions
These Boursin Baked Pastas are best served immediately. You can add some freshly grated parmesan cheese or even fresh herbs like basil or parsley on top. I found this pasta to be an excellent meal, although a salad and some garlic bread are never a bad idea. How to store and reheat leftovers
- Storage: Although this pasta tastes best fresh, leftovers can be stored in an airtight container in the refrigerator for up to 3 days. I do not recommend freezing this as the cheese sauce will become gritty when thawed.
- Reheat: Heat the pasta in the microwave or on the stove. You may need to add a splash of water or stock to thin the sauce slightly.
Ingredients
- 300 grams of dried rotini (or similar short pasta)
- 1 pint cherry tomatoes
- 8 ounces sliced cremini mushrooms
- 4 garlic cloves, finely chopped
- 1/4 cup extra virgin olive oil
- Coarse salt and pepper to taste
- 1/4 tsp crushed red pepper flakes
- 5.2 oz round block Boursin garlic herb cheese (reserved whole)
- 1 dl coarsely chopped fresh spinach
- 1/4 cup grated Parmesan cheese
- shaved parmesan cheese as a topping
Instructions
- Preheat oven to 400°F. Place the cherry tomatoes, mushrooms, and garlic in an ovenproof, greased baking dish (9×13). Drizzle over olive oil and season with salt, freshly ground pepper, and red pepper flakes. Toss to coat.
- Push the tomatoes and mushrooms aside and place the Boursin circle in the center so that the tomatoes and mushrooms surround it.
- Bake for 30 minutes in a preheated oven, or until the cheese melts, the mushrooms roast, and the cherry tomatoes burst.
- Meanwhile, cook the pasta in a pot of boiling salted water according to package directions until al dente. Drain and reserve 1 cup of the cooking liquid.
- When the boursin and tomatoes are cooked, add the spinach leaves, stir to wilt, and break up the cheese. Mix everything into a sauce.
- Add the cooked pasta to the pan and stir. Add a little of the reserved pasta water to achieve the desired sauce consistency if necessary. Stir in the grated parmesan cheese.
- Serve immediately with some grated Parmesan cheese.
